My brother always brings a couple of pans of enchiladas opening fishing. I love them, but needed my own recipe. After some tinkering, here goes:
1/2 lb hamburger
1/2 lb pork sausage (Jimmy Dean or the like)
1 medium onion
1-2 jalepenos (leave seed and white stuff for extra spicy)
2-3 cloves of garlic
1 small can of green chilis
1 can of diced tomatoes
1 tbsp chili powder
1 tbsp cumin
1 can enchilada sauce (ok, I kind of cheat here, not from scratch….yet)
8 oz cheddar jack shredded cheese
8-12 corn tortillas
Sour cream, salsa or cilantro for serving
Brown burger, sausage with diced onion. Add minced (I use garlic press) garlic, peppers, tomatoes, spices and let simmer for 20-30 minutes.
Scoop about 1/2 cup in each tortilla (warmed, so they dont crack) and place open side down in a greased pan. Spoon over enchilada sauce and cover with cheese on top.
400 degrees for 15-20 minutes, just until cheese is melted.
The really nice part is that you can make the mix stuff with meat and veggies in bulk, freeze or refrigerate and use as you wish. Then warm up mixture, throw in tortillas and finish off in minutes. Being a single guy, I make a batch of stuff meat stuff and only cook 3-4 enchiladas at a time and it is fresh and delicious each time.
