x2 on smokingmeatforums.com Its my go to for smoking. With that smoker you have, id get an A-maze-n pellet smoker to go with it. I have the same one and the combination of the two allows me to smoke anything at cooler temps from cheeses to sticks. I really enjoy the setup.

    3x’s On the SMF.
    https://www.smokingmeatforums.com/

A second one that is real in debunking oldman’s tales is,
    https://amazingribs.com/table-contents

Between the 2 if you signup, there is a search function that is outstanding with whatever you want to know and at however far you want to take it.

With that said, there are many on here that would be willing to help you too. But the info is already in print if you want to do a little looking.

amazingribs is legit. I’d suggest buying his book:

I think it’s basically all the content on his website, in book form. Recipes and food stuff are one of the few things I really prefer to have a physical book for instead of scrolling through a long webpage on my phone.

Tons of myths debunked, and lots of really good recipes, not to mention really complete info on different types/cuts of meat.

Many smokers have their own forums. Worth a check for your brand.

If you really want to get into the science of cooking and smoking meat as well as learning techniques that work, along with a ton a great recipes, rubs, brines, sauces, etc. Amazingribs.com is my favorite. Next come Smoking Meats forum. Those are really the only two you need.

smokingmeatforum.com is the one stop for all spot. I have learned a ton on there. Don’t spend a nickel on books tho. Smoking is really simple once you dig in and get some time In. Materbuilt smokers are ok, I started with one too. I have since moved on to a home made stick burner made from an old refrigerator and it’s ridiculous how much better my Q has become. I’d put my babybacks and smoked turkey up against anyone. Low & slow and temp control is key. I only use split hickory logs too.

Great looking home built there Thomas. Do you mind sharing what you used for gasket material on the door?

I will look at those sites for information going forward.

I know there are better smokers out there but had to start somewhere… In the winter I smoke in my garage with the electric I heard pellet cookers are not great in winter but will look into that on one of the sites.

    Thanks again…

You won’t be unhappy with the Masterbuilt. It was my first true smoker and I still use it. In terms of ease of use it almost cant be beat. And it turns out great flavor. It’s all about internal temperature. Don’t worry about time. When the meat gets to the temperature you believe it’s done at (this varies for a lot of people) take it out. Enjoy the great food you will make with it.

FYI amazingribs.com has a HUGE section of reviews they have done on just about all BBQ/smoking products. Worth a look.

I have a RecTec pellet grill and it performs flawlessly in the winter. I smoked an entire prime rib roast last christmas when it was like -10 degrees outside and the temp never wavered more than 5 degrees or so.

You will of course use more pellets in the winter, but a nice moving blanket draped over the smoker helps keep some heat inside and reduces the pellets used quite a bit.

You’ll be able to make some mighty tasty food with the masterbuilt though, then once you get into it you can decide if you want to drop more coin on a different setup.
