Drip Beef Sandwiches

    Somewhat copied this from the Pioneer Woman recipe but enhanced it by putting it in the smoker.

    4 lbs chuck roast
    1 can beef broth
    1 cup water
    1 TBSP Italian seasoning
    1/2 jar of pepperchinis
    1/2 packet of onion soup mix

    I smoked the roast for 3 hours and then braised in the oven at 275 for 3 hours.

    The Pioneer Woman, Ree Drumond, has totally awesome food. I can go through her cookbooks and there is not one single thing that doesn’t look good.

    Nice cooking there.

    Like most smoked food, sandwiches were even better the second day. Have enough to start trying tacos or burritos tomorrow.

    Is the large pot underneath the meat in the smoker there to collect the drippings and do you then add the drippings to the braising liquid? That looks great!

    The pot under the meat is my water bowl. The bowl sits directly over the heat source and provides moisture during the smoke to help prevent meat from drying out. The liquid remaining in the bowl just gets discarded.
