Good News, I think… NO CWD found

Freeze it. Or if you have a vacuum sealer you could go that route and see how much shelf life it buys you.
Or you could make your jerky out of some thing edible and then you wouldn’t have to worry about it being around for more than a day or two.

Chappy just needs to get himself 6 kids like Tuckner and the problem is solved. I’ve seen that pack roar through a kitchen like locusts. Leftovers? There ain’t no stinkin’ leftovers!

Honest to God, one time I was smoking ducks and geese and I had them cooling on the counter on a cookie sheet. I came back in…an here half of them were missing! They all denied having done anything. A quick breath check proved 4 of them were liars.

You mean like Catfish or Sturgeon?
Despite all attempts to deviate from the original there’s still nothing better than a good old fashioned BEEF jerky.
I’ve had fish jerky. Once. Suffice it to say that if the starting protein ever had fins it is NOT suitable for jerky in this man’s opinion.
But by all means, please do keep shooting those geese. Or strangling them in the park before work and hiding them in your trunk on your way to 3M.

A vacuum sealer is a must in the kitchen. Cut your bags long to access your food as much as needed, it only takes seconds to reseal.. There isn’t too much I don’t vacuum seal. So…..If anyone has a goose or 2 to get rid of this fall,I’ll take them off your hands.

Do you mean “WORD?” Sounds like the Baileys is kicking in! You might want to consult with BK or Lip Ripper, they are doing much better now since they attended the Sylvan Learning Center this Summer.

Don’t listen to these guys Chappy this year I have made about 50Lbs of snow goose jerky, as I can’t make it fast enough for people. I still have 40lbs left I just need the time.
I vacuum seal mine in to 1-2 lbs bags. Once open you have a week or two, so you don’t need to worry about re-sealing. Heck when I bring it on the ice or in a boat, or in the field I have a hard time finding any when I want some.
However when I make large batches I’ll leave 3 bags out for me, and toss what ever bags I don’t hand out in the freezer. I don’t know how long of shelf life I can get out of Vacuumed bags, but I had a “test” bag last 3 months before it found the bottom of my stomach. I just pulled a bag out after 6 months in the freezer last week and it was as good as the rest.
How are you making your Jerky? Oven, Or Dehydrator? I make mine in the oven at the moment, and when it’s done I let it cool for ATLEAST 1 hour. Then take about 5 sheets of paper towel, and lay the jerky on the towel and roll it up to get the fat off.

1 1/2 teaspoons Kosher salt
1 teaspoon cracked black pepper
1 teaspoon cayenne ( Or red pepper flakes)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Tabasco sauce
1/2 teaspoon Liquid Smoke
1/4 cup water
1/4 cup soy sauce
2 tablespoons Worchestershire sauceIF you like it with a little more kick (I double the Black pepper, Cayenne, Garlic, and tobasco.) I found using cayenne works better than the flakes just because it distributes better. and the flakes tend to fall off in the packaging process)
Mix all ingrediants together well and put in a zip lock with your sliced meat and let sit for atleast 12 hours 24 if you have the time.
For anyone else set on racks, for 1 hour prior to starting the dehydrating, let the meat come to room temp, and pre heat your oven to it’s LOWEST setting. Set in oven, and prop door open with a wooden spoon or tinfoil. Don’t bother checking for Atleat 4 hours. AFter 4 hours give it a check, and continue checking every 45 min or so. ( I tend to have some that finish before others as I don’t have a slicer and cut all mine by hand. so I don’t have the most consistent thickness) Pull out when they feel like jerky ( I like to tear into them to get a good idea on feel and check the insides) let sit for 1 hour remove fat from jerky, and bag, or eat!

That’s what the Minnesota Department of Natural Resources (DNR) has received following the testing of more than 2,300 deer this fall and winter for Chronic Wasting Disease (CWD).
CWD was discovered last fall in a hunter-harvested white-tailed deer near Pine Island. Since then the DNR has instituted several hunting regulation changes including mandatory submission of samples for disease testing of deer taken in the CWD zone.
“The 2011 deer hunting season is over and extensive sampling in southeastern Minnesota did not detect a single case of CWD,” said Lou Cornicelli, DNR wildlife research manager. Cornicelli said test results lend confidence “that we caught the disease on the front end of the infection.” Since the discovery of CWD in a wild white-tailed deer in fall 2010, DNR has sampled 1,850 adult deer without finding another positive.
Cornicelli said 1,125 adult deer were tested in CWD zone (deer permit area 602) during the hunting season and an additional 1,265 samples were obtained from deer areas surrounding the CWD zone. .
Cornicelli said there are no plans to conduct winter sharpshooting. However, hunter-harvested surveillance will be conducted again during the 2012 deer season. While the evidence suggests there is not a widespread CWD infection, surveillance in future years is needed to make that final determination. Also, a deer feeding ban remains in effect in Dodge, Goodhue, Olmsted, and Wabasha counties for the foreseeable future.
“Overall, hunter cooperation and public support has been tremendous,” said Cornicelli. “While there are always challenges when you conduct this type of surveillance effort, it really couldn’t have been successful without the cooperation of hunters, taxidermists, landowners, and the businesses that allowed us to operate check stations.”
Cornicelli also thanked the Minnesota Deer Hunters Association for their support in the surveillance effort and for donating a muzzleloader as a raffle prize as an incentive for hunters to provide a CWD sample.
