    That’s fast I should time the guy that cuts mine up I think he had been a butcher for 15 years. Be cool to see how fast he can do it.

    I’ve de-boned hundreds of deer, but I’ve never seen anyone go at it quite like that. I prefer to have them hanging so I can use the weight of the meat as leverage. I like that meat hook, though. It probably saves a few fingers!

    I don’t skin the ribs…does anyone else do that?
