That doesn’t make scense. How could you not see where some one cut the hide in the back to take them out. Was the deer already skinned? It would be a ton of work to take them out from the inside, You would have to cut through all the ribs.

i think your thinking of the back straps im talking about the tenderloins that ar down in the pelvic area inside the deer

I was disapointed/ at a loss to find that both of the local butcher shops don’t take them out!

I Have owned a locker plant for 40 years and have done thousands of deer. You would be surprised at how many tenderloins fall victim to that 18 inch bowie knife by a guy thats all pumped up on adrenalin and coffee. Some get filleted out with the paunch and some are diced up and still there. Then theres the ones with the ground corn, browse and alfalfa covering them like a sugar coated donut.I’ve also seen where the deer has been hung a little to low in the garage and the tenderloins and the hind legs both fall victim to the family pets. Other than that it could be one of lifes little mysteries.

I say one of your “friends” had a good meal…and a laugh too. Happens all to often in my circle of “friends”. I’ve paid back the favor myself though

Now the question is who?? Mr. Holmes

The exposure to air would tell you how long they have been out for. If the butcher had cut them out, the flesh would be very moist and obvious. If they had been cut out for a few hours, you would see the where the fresher flesh would have started to dry a little and be discolored from that around it. Even if it was frozen, you would see a difference.

I am gonna go and say that the butcher took em. I have bad expeirience with them. You dont even get your deer back. I wont mention the name, but since then I tought myself to cut my own deer. My tenderloins are cut out as soon as its hanging at camp and then directly on the grill with some Schmidts.

At most lockers You get the steaks from your deer anything ground or processed is made in 100 lb to 500 lb batches, so unless your butcher treats you special no one gets just there deer back.
