Venison sauage recipes.

I went and bought a grinder and stuffer this year. Got tired of waiting for the butcher to get it done. We like to cook polish sausages in our portables when hungry. Not wait until the end of February or so to get them back. Does any one know where to find a good polish and summer sausage recipe. Can’t wait to get started. Oh.Yea we got a smoker too! Thanks for any replies.
