Nothing like some homemade soup on a cold snowy weekend. I made a vegetable beef soup yesterday and it turned out great!
Crockpot Vegetable Beef Soup
Ingredients
1 pound ground beef, browned and drained
1/4 medium onion, diced
1 and a half potatoes, peeled and diced into 1 inch pieces
8 oz frozen mixed vegetables
1.5 cans petite diced tomatoes (14.5 oz cans)
2 cups beef broth
1 tsp Italian Seasoning
Salt and pepper to taste
Instructions
1. Place all the ingredients in a 6 quart crock pot.
2. Cover and cook on low for 4-6 hours or on high for 2-3 hours.
3. Serve hot and enjoy!
