Cinnamon Apple Bread

    So another idea of what to do with all these frickin’ apples… Cinnamon Apple Bread! I wasn’t totally satisfied with the recipe I used last night, so tonight’s recipe was modified a bit to add among other things, some brown sugar. It’s delicious and made my kitchen smell wonderful! I’m going to make a bunch of this recipe and freeze them for winter!

    Sharon’s Cinnamon Apple Bread

    Ingredients
    ½ cup packed light brown sugar
    1 ½ teaspoon ground cinnamon
    2/3 cup white sugar
    1 stick butter, softened
    2 eggs
    2 teaspoons vanilla extract
    1 ½ cups flour
    1 ½ teaspoons baking powder
    ½ cup milk
    1 large apple, peeled and finely chopped

    Directions
    ~ Preheat oven to 350 degrees, and grease a 9×5 loaf pan.
    ~ Mix brown sugar and cinnamon together in a bowl and set aside.
    ~ Combine white sugar and butter until smooth. Add eggs and vanilla and continue to beat on medium speed until combined.
    ~ Add flour and baking powder, then milk.
    ~ Pour half the batter into the prepared pan, and cover with half of the apples.
    ~ Pat apples into batter with the back of a spoon and then sprinkle with half of sugar and cinnamon mixture. Swirl a little with tip of spatula.
    ~ Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture.
    ~ Pat topping into the batter with the back of a large spoon and swirl.
    ~ Bake for 55 minutes. Then cool in pan 10 minutes before transferring to a cooling rack.

    My tree is a Dwarf McIntosh apple tree. Perfect apples for baking, as they’re a bit in the tart side. Though I like to eat them plain too. I also like granny smith apples but some find them too tart to simply eat.

    Made this tonight and it was great. Don’t try getting out of pan to early or you’ll be eating some with a spoon.

    Please don’t. I made a pretty decent living buying equipment from failed businesses.

    Keep baking at home & learn how to package and ship it. Or, if you want to deliver it and fish Rainy just bring some with when you come.

    If you get making some pies or crisps i’m in!!

    I don’t think I actually would open my own bakery. I enjoy baking for fun and wouldn’t necessarily want to become a business owner. I’ve never been up to Rainy, but if do get up that way some day you can bet I’ll bring with me a variety of sweets to share! )

    You mean a stand mixer? No. Sometimes I use my stand mixer and sometimes I just use my little handheld mixer – both are KitchenAid brand though. Generally speaking, I use the stand mixer for dough since it’s thicker and often more sticky to mix (think peanut butter cookies!). But for batters (cake, quick breads), the hand mixer works just fine since most batters are more runny than most doughs and thus easier to mix. The handheld mixer is easier to wash too, so if I don’t need the stand mixer I favor the handheld. And now that I think about it, for my homemade brownie recipe – I don’t use either! I just give it a good mix and whip with a big spatula. That was probably way more thorough than it needed to be. smirk

    Yay! I’m glad to hear you made it and like it. Yes, it definitely needs that cooling time before removing it from the pan. It’s quite soft until it cools.

    Baking – the perfect excuse for using the oven to warm up some of the house because it’s only September and you refuse to turn on the damn furnace yet! So I’m making another loaf! 👍🏻

    Currently 48 degrees in my neck of the woods. 😬
