    What’s for Christmas dinner? I was pushing for smoked prime rib but got overturned by my wife and daughter. I’ll do a smoked ham, au gratin potatoes, a veggie and some rolls.

    Dinner for me and my wife will be served on the plane ride down to Tampa, so i’m thinking Jack on Ice. Maybe just Jack. toast

    No steadfast traditions for us but one son is asking for duck and the other is thinking crab and/or shrimp probably end up doing both….

    I’m guessing spiral cut ham, mashed potato’s, green bean casserole, jello salad, warm dinner rolls.

    I got a kitchen torch as a gift this year and will try to make a sugar glaze on my smoked ham. I might look for granulated honey and try coping a honey baked ham.

    Roasted beast and some shrimp, double baked tatoes, bacon wrapped water chestnuts, stuffed shroons…. My immediate family (wife and daughters) will be together for the first time in 4 years so this is shaping up to being a special Christmas!

    Christmas eve tradition is piles of snow crab with immediate family.
    Christmas day will be ham, twice-baked potatoes, etc. with my family.
    The 26th will be shrimp and steak with my wife’s family.

    Elastic waistbands optional.

    Family likes sticking brown sugar and pineapples on the ham, then all those juices flow with ham juices to the bottom of pan. Gather that up, mix in some thickener and you have this sweet, thick, stick to your ribs Amber colored gravy that is epic.     My wife claims that her grandma made awesome ham gravy. I’d never heard of it. I made some a few years ago. It was good, but apparently not like Grandma’s, and of course, Grandma never had a recipe…

    SuperDave, I’ve been doing a glaze for years on my double smoked hams. Well a smoked ham from the butcher, scored, then smoked with apple wood on the Weber. Here’s the run down.

    into a small sauce pan
    1 small can smoked chipotle with adobo sauce, seed about 6 of them, scrape as much of the adobo sauce out as you can

    1 small jar sugar free apricot preserves
    big glug or two of honey
    splash cider vinegar
    couple heaping spoonfuls of your favorite rub (try to stay away from the salt)
    Couple palm-fulls of brown sugar

    slowly get to a simmer then smooth out with the motor boat stick blender, brush over the ham 2-3 times in the final 1 hour of your cook. Save some for a dipping sauce, or better yet put on the hammy sammy’s the next day. I’ts not an exact recipe, adjust the heat if you want it hotter, add the whole can of peppers.

    some kind of smoked fish
    some kind of pickled fish
    pickled beets/carrots/peppers/etc
    tom&jerrys/old fashioneds/nog

    *and a pair of sweatpants to change into after dinner woot

    Speaking of which…..I had the worst gas station food of my life yesterday. $1 cheeseburgers from Holiday gas station. Honest to God, I wouldn’t feed that stuff to my worst enemy’s dog.

    Christmas Day meal will be fresh, non cured, outdoor raised, smoked ham roast, smoked baked potatoes, and other fixens. For appetizers I will smoke a venison fattie, a ground pork fattie, and maybe an elk fattie. The fatties will all be stuffed with cheese and other suprises.
    The day after Christmas I have another family celebration to go to and I will be smoking a turkey for that also. The fixens are up to someone else that day. Now the key is to not mess anything up.

    Love the thread! Giving me some good ideas for the eve. Might just do a brisket.

    Question for the smoked prime rib guys. What kind of crust forms on the outside of that roast in the smoker? Anything similar to oven cooking it? I’ve got a great recipe to crisp the outside which basically makes the roast.

    bg, this is my prime rib from last Christmas done in my smoker. And if you aren’t fully pleased with the result, a good reverse sear will do the trick.

    Sirloin steaks on the grill, king crab legs and a salad.
    ( More room for more steak and crab that way)
