Got inspired by a buddy that was using up some garden veggies, made some Chow Chow relish. Cabbage, green tomatoes, onion, peppers, sugar, vinegar & spices.

It is almost like a chutney in my mind. Use on brats, hot dogs or any meat in general. First sample was pretty good and should only get better with a little time.

Not really Dave. I remember my grandmother making chow chow and that I wasn’t a fan of it.

It’s cooked down for about a 1/2 hour. The vinegar and sugar gives it both a zing and some sweet. The spices give it a little after burn & heat.

I filtered through a bunch of recipes and even tweaked the one that I picked so I’m sure that there is a large variance in taste between the way folks make it.

As I understand it Dave, chow chow was an old farmer’s way of using up stuff from the garden, old farmers not being ones to have anything go to waste. Recipes were all over for it. What went into it was dependent on what was left standing in the garden before a killing frost hit. Sugar/vinegar were absolutes. Cloves, ginger, cinnamon varied in amounts and were certainly used in most of the recipes but I’m sure hot peppers found their way into some home’s recipes. I like raw cabbage and sauerkraut but can’t stand cooked cabbage of any other ilk. My grandmother used the green tomatoes, cabbage, onions and ground raisins and who knows what else was straggling out in the garden. Cooking the stuff brought out the smell of the cabbage so that ended any ideas of me eating it.

I went a little off script with my spices: ground pickling spice, black pepper, dry mustard, celery seed, Season All and red pepper flakes.

In the whole scheme of things on the chow chow Dave I don’t think there is an end to what people can use in it. I guess that’s the beauty of the relish.

I used to follow a recipe once before monkeybuttizing it. Now I just take what I like and make the rest my own.

“I used to follow a recipe once before monkeybuttizing it. Now I just take what I like and make the rest my own.”….SuperDave

I had a jerky seasoning that I really liked and thought it would be good as a stick so I made a half a batch of sticks using it. They were dynamite. And the next year the seasoning was no longer available anywhere. Last year I used a darned good jerky seasoning in a batch of sticks and they too have been incredible. I’ll do the same again this year. More and more I see this separating jerky and stick seasonings as a marketing gimmick, sort of like summer tackle and ice tackle. The seasonings work in either product like the tackle does in either venue.
