Cheesy Kielbasa Pasta

    Tonight I made a new dish – cheesy kielbasa pasta! This recipe didn’t use the InstantPot, but rather just one large pan and cooked in about 30 minutes. I modified the original recipe to use only half the cheese that it calls for. It was plenty cheesy! 😋👍🏻

    Cheesy Kielbasa Pasta

    Ingredients:
    1 tbsp olive oil
    1 (13oz) package turkey polska kielbasa, sliced into 1/4 inch pieces
    1 (14.5oz) can petite diced tomatoes
    8 oz penne pasta, uncooked
    1 1/2 cup chicken stock
    1/2 cup milk
    1/2 cup shredded cheddar cheese
    chopped parsley for garnish

    Instructions:
    ~ Heat a large skillet over medium high heat. Add oil, swirling to coat. Add kielbasa and cook for about 5-7 minutes, stirring occasionally.
    ~ Mix in tomatoes, pasta, chicken stock and milk. Stir and bring to a boil.
    ~ Reduce heat, cover and cook for 10-12 minutes until the pasta is cooked.
    ~ Stir in cheddar cheese until melted.
    ~ Garnish with parsley and serve!

    Looks good Sharon. I’m not a fan of any processed turkey meat so I’d be using plain Kielbasa or Polish Sausage for the recipe or maybe even one of the rope-type sausages from Hillshire.

    We use a lot of Velvetta for cheese dishes but the cheddar sure sounds good too. When you call for cheddar, are you using the mild, medium or sharp cheddar? Your dish appears to have a fairly smooth cheese sauce and when I use the sharper cheddars it never gets as smooth as that.

    Tom, I used a mild cheddar for the cheese and it melted into the dish nicely.

    For the kielbasa I just grabbed something that looked familiar at the grocery store. Cub Foods – Hillshire Farm Turkey Polska Kielbasa
    I have no idea if it’s considered a processed turkey meat, but whatever it is it was delicious!
