    Kept a few cats last week after my first cat outing and I must say…they were pretty dang tasty! Per advice of fellow IDO’ers…I took out the bloodline area and soaked in cold water overnight. Next day, removed any yellowish area, dredged in cajun shore lunch mix, and into the fryer. I know some people would spit on catfish but my wife and I enjoyed it.

    prior to cleaning, bleed them by cutting their gills or tail off and they will be even better next time.

    And now you all understand our Southern MN fascination with bullheads… they’re just relatively small catfish. Processed right and cooked correctly they are very much just like really small channel cats and taste just as good.

    In fact now I am jonesing for a mess of bullhead… hrm, maybe in a couple weeks I can go down to my aunt’s house in Faribault and we can do up a bunch. w00t!
