Carmel Apple Oatmeal Cookies

    Today I made a new cookie recipe – Carmel Apple Oatmeal Cookies! They turned out great! And it’s sad to report my apple tree is done for the year. It was a great year and I hope next year is just as fruitful!

    Carmel Apple Oatmeal Cookies

    Ingredients
    1 cup Steel Cut Irish Oatmeal
    1 ½ cup flour
    1 tsp baking powder
    ¼ tsp baking soda
    1 ¼ tsp cinnamon
    ¾ tsp ground ginger
    ¼ tsp salt
    ½ cup (1 stick) unsalted butter, softened
    1 cup packed dark brown sugar
    ½ cup granulated sugar
    2 large eggs
    1 tsp vanilla
    1 medium apple, cored and chopped

    18 soft carmels, unwrapped
    4-5 tsp whole milk

    Directions:
    ~ In a large bowl whisk the oatmeal, flour, baking powder, baking soda, cinnamon, ginger, and salt until combined.
    ~ In mixing bowl, beat the butter and sugars until light and fluffy. Add the eggs and vanilla and beat to combine. Add the dry mixture to the wet mixture and beat until just combined. Fold in the apples.
    ~ Chill the dough for 1 hour until cold and firm.
    ~ Preheat the oven to 375º F and place rounded tablespoons of dough on the sheets, about 1″ apart.
    ~ Bake, two trays at a time, rotating and switching racks halfway through, until golden, about 11-14 minutes. Let cool 5 minutes, then use a spatula to transfer cookies to a wire rack, cool completely.

    ~ In a small microwave safe bowl, combine the caramel and milk. Microwave until just melted, about 1 minute; stir until well combined. Drizzle melted caramel over top of cooled cookies and let cool before eating, at least 20 minutes.

    Thanks everyone! 😁 I think my aim was okay on the carmel drizzle… but maybe next time I’ll let it cool a little after heating/mixing so then it won’t be so runny and messy.

    I’m not sure. That’s just what the original recipe said so maybe there’s a specific brand for that? I just bought regular ol steel cut oats from Cub. 👍🏻
