Will be making 10 qts on thanksgiving day. Like to add potatoes and carrots to it. Saves on freezer space. Looks like dog food in a jar when done but sure is good. One thing I can make in the ice house that doesn’t set off the smoke detector.

we make it with a little beef fat added to the jar and some liptons onion soup mix in there also. I like to eat it over rice or noodles

Season meat, 2 beef bouillon cubes, fill half jar with venison then potatoes ,carrots and some sliced onion. Press it into jar it will shrink up. Don’t add any water will make its own juice. I use really small red potatoes or they sell a small white potato I leave skins on. Pressure cook think its like 25 minutes i have to google that part every year.

Yes 90 minutes on quarts 75 on pints just curious how the carrots do at 90 mins of pressure cooking. Short cooking any meat is a recipe for the hospital. I always hear from people that they cooked it on the stove all day and they shouldn’t have to pressure can it that long but that is incorrect. And always only in a pressure canner.

It’s 11 psi where I live but that will depend on your elevation from sea level. The whole idea is to get the water to 240 degrees.

I love this but have always been afraid to make it. Id hate to make poison. lol. Botulism does not sound like fun. Maybe there is a Youtube video I can watch.

One bouillon cube, fill third of jar with seasoned venison, slice of onion, 8 little carrots, and fill rest of jar with cut up red potatoes. 90 minutes at 15lbs pressure. One jar didn’t seal so will eat that one tomorrow.
