While at the lake this weekend, a co-boater stepped on my sons St. Croix and broke off about a foot of the tip. Has anyone dealt with St. Croix with a similar issue and what was the result.

Seems to me that the co-angler who stepped on your sons rod needs to step up and take some responsibility for his/her actions.
I know if I stepped on my buddies rod and broke it, that my homeowners insurance would cover 100 percent replacement. I don’t carry a deductible on liability and your son’s rod would fall under my liability, if I was the one who broke it.
Now if I broke my own rod, my homeowners insurance will not cover that. In that case, I’d follow St Croix policy on repair/replacement as mentioned above.
