    I get mine from Heritage Meats in Galesville WI. waytogo

    I would suggest that anyone that wants any sort of cut of meat, including burger, stock up. This includes chicken, beef, pork. The 3 big ones.

    This is going to be the new AW. The problem is this won’t be so easy to recover from. It takes along time to raise and process food.

    X2, this is a really big deal.

    I’m making a big order from Hack’s in birdtown tomorrow for delivery next week plus I’m fixing to make an order from my wife’s cousin who raises feeder cows near Glencoe. I’d suggest anyone that has the means and capacity to do the same.

    My guess is many of the briskets in the supply line are going to be ground into burger to help supply that demand. The number of people who buy packer briskets are far fewer than the number of people who will be buying/hoarding ground beef. Anytime you publicize there may be a shortage of anything you have now guaranteed there will be a shortage because people are going to hoard.

    I have about three left in the freezer and ordered another case along with some other items from a local food service company. I ordered yesterday and have not yet received confirmation so don’t know if I can get them. And no I’m not hoarding I need that many for catering events I’ve been asked to do this summer.

    If you can’t find a nice packer brisket locally and want to treat yourself try buying and making yourself an American Wagyu brisket. I’ve done a number of these and they are a treat I can assure you. They cook a faster than the normal choice or so called Costco prime briskets but they are delicious! They are in stock.

    Costco has prime labeled full packer briskets for a good price (under $4 per pound). Stay away from the “choice” stuff. Just made one last weekend and it was spectacular!

    Scott nailed it. Once you go prime you will never go back. But my tip for prime is that it is usually done before the stereotypical 200+ degrees. Start testing no later than 190.

    Costco 95% of the time. I like getting them from the local meat market but they charge you at least twice what costco does, and they are typically pretty small, and you usually need to ask ahead of time so they keep a full brisket for you or you are likely to just get a flat.
