    Ended up stuffing 80#’s of brats this evening. Tomorrow 400# of baloney gets stuffed and smoked.

    Brats don’t get smoked so we decided to get them out of the way. Shawn

    Shawn, are you doing this commercially?

    I have no interest in smoking and processing meats for anyone other than my very small family (me the wife and a daughter 2,000 miles away) and a few ( hah ok very few buddies cause I don’t get out too much).

    I just have an intense interest to learn for myself only (for the most part).

    IA BOY on here may know that I may have at a few times shared a few e-mails as to what I know. It is just when I see someone that is trying to only feed his family and is trying to excel for only his “Family’s” gratitude, well that is where I’m willing to lend a hand.

    Anywho, I’m interested in your processes.

    Good Lord!!! how much beer does it take to cook 80 pounds of brats???
    and that question does not include the hooch it took to make all of those!!

    ya,that Denny O fella will lead you down a whole road of trouble!!!
    I could of went to canada four times,hired that Fellegy fella for two whole weeks straight and had money left over compared to what I have spent on meat processing equipment!!!!

    but,I have found that the value of the friendship that has come about from this and the wonderful food stuffs that I have done at home with Denny O’s help far out weigh what I have spent and I am having fun doing it.

    I don’t do this commercially. Just some friends and my immediate family. I got started in this years ago helping my father in law. Since he passed away a couple of years ago I was willed all the processing equipment. Once you have an established crew that know how things flow it goes very smooth. Shawn
