    Can anyone recommend a meat market in the metro area that sells Bison? Thanks!

    Pure Bison may be a little difficult to locate. Beefalo may be found in a fair # of meat markets. Not a meat market but there was a place called Grazing Acres in the Elko/ new Market area that use to sell pure Buffalo direct to consumers. Not sure if they still do

    Makenthun’s in St. Bonaventure did, it’s been years since I was there. Eichten’s is in Center City and sells bison products at the St. Paul Farmers Market on weekends – call and check to see what is in stock. Silver Bison Ranch in Baldwin WI sells every cut of bison. You can see them on the south side of I-94 a mile west of the Baldwin exit. They require an appointment (mostly to make sure they’re in the store when you arrive, otherwise they’re working the ranch). The Silver Bison Ranch meat is outstanding.

    Thanks, I’ll give Eichten’s a call to see if they’ll be in St Paul this weekend.

    Very familiar wit Silver Bison Ranch, just not wanting to drive that far.

    If you get down towards Mankato, the farmer’s market is held in the Best Buy parking lot every Saturday morning. There is a booth there that sells Buffalo.

    If have not had a ribeye do yourself a favor and get a few.

    I had a Buffalo steak once, not sure what kind but it was pretty tough.
    Much prefer a tender beef ribeye.

    The Bison ribeye wasn’t tough?

    We actually do the opposite for most of are steak. High heat in cast iron and course ground salt.
