I’ve got a friend coming over for dinner and he can’t eat fried walleyes. Any suggestions on how to bake it?
I’ve been using Zatarans Blackened Fish seasoning and air frying fish this winter. Its a little spicy but not to bad. Pretty tasty and light, no breading or greasiness.
Wrap in tinfoil on baking sheet. Butter, onion, lemon and some seasoning. Bake at 350 for 30 min. Probably my favorite way to cook walleye.

Preheat the oven to 450 degrees F (230 degrees C). Grease a baking sheet.
Beat eggs and water together in a bowl until smooth; set aside. Combine bread crumbs, potato flakes, and Parmesan cheese in a separate bowl with seasoned salt until evenly mixed. Dip walleye fillets into beaten egg, then press into bread crumb mixture. Place onto the prepared baking sheet.
Bake in the preheated oven until fish is opaque in the center and flakes easily with a fork, 15 to 20 minutes.

Here is a recipe I found off of YouTube that I like.
Ingredients:
Eggs
Fresh Pepper
Garlic Salt
Italian Bread Crumbs
Parmesan Cheese
Butter
Directions:
Coat fish in egg wash, then bread crumbs. Place fish in pre-greased glass baking dish. Sprinkle with garlic salt, and fresh ground pepper. Melt butter, and spoon onto fish. Grate parmesan over fish. Bake at 425 degrees for 20 minutes.
Enjoy!
Just incase, dont forget to remove the pin bones as baking will not cook them soft.

Could just cook them in butter with whatever seasoning maybe some franks for heat
Crushed Ritz crackers and a good quantity of garlic pepper. Egg wash and then in the crackers. Drizzle a little melted butter on them and bake at 400 for 13 minutes.

I don’t mind the onions to add flavor while cooking or baking, I just ain’t gonna eat ‘em.

Do the same thing essentially, on the grill. Sort of use foil as a bowl and grill away.

Almond, pistachio, pecan etc. crusted. Bush with Mayo {Dukes if you can find it.} Coat with 2 parts fine chopped or crushed nuts to one part panko crumbs, season to taste. Bake or I have grilled on the Blackstone.
We use Shorelunch oven style and mix in corn flake crumbs along with some seasoning. Works great for us.
