Bacon-wrapped Ditch Chicken!

    I got an opportunity to go Pheasant hunting in Western MN on Saturday. Something I rarely get to do (and it showed). We hunted all day and after the last push, even the dogs were wiped-out. I haven’t been this sore in a long time but MAN, it was FUN! Saw many birds, shot 8 times and personally hit ZERO. Luckily our small group downed enough birds to let me take one home anyway. MY 9 AND 12 year old boys are really into hunting and eating wild game. They were really eager to try it. Hard to beat anything bacon-wrapped; definitely went the safe route with an easy internet recipe. Cubed’up, wrap in bacon, dredge in a bowl of 2/3 cup brown sugar an 1TB chili powder mixture. Cook on a raised rack pan at 350 for 35 min. So good! gone in 10 min. My wife even didn’t hate it which is about as good as it gets with her and Wild Game. Hopefully I get some more opportunities like this. But ’til then, I need to go hit the rage with a box of shells and some clays!!!

    We put jalapeno and cream cheese in ours and grill them to add a little smokey flavor, ideas for next time. Either way they are good.

    I REALLY wanted to do poppers, but these were as much for my kids as they were for me. The kids probably would’ve have been as excited for the pepper part. Next time for sure!

    I’ve done them that way. Very good.
