I’m adding a second network station to my console, I would like units on same switch. Is there any risk of just twisting two power cables together then crimping a single spade connector to them

If your switched fuse is sized for a single unit then you may start blowing fuses. And “just installing a bigger fuse” is a bad idea. I’d up-size the switched fuse then add the appropriate sized fuses in line coming off the terminal going to each unit.

Should be positive out that should be the switched power. Can always test with a meter.
