Sweet Italian sausage
Ingredients
o 10 lb pork butt or ground pork
o 4 t salt
o 2 cups cold water
o 1-1/2 t cracked fennel seed
o 2 tsp coarse black pepper
o 1 t brown sugar
o 1 tsp caraway seed
o 1 t coriander
o 3 tsp crushed hot pepper
o 2 tsp garlic powder
Or
o 4 lb pork butt or ground pork
o 1 lb ground beef
o 1 t brown sugar
o 1-1/2 tsp cracked black peppercorn
o 5 tsp salt
o 2 t fennel seeds
o 1-1/2 t crushed red pepper flakes
o 1 cup cold red wine
o 4 oz mozzarella shredded cheese
o 1 tsp garlic powder
Directions
1. Grind the meat through a course plate. Mix the spices with the water and pour over the meat that you ground. Mix everything very well. Grind everything one more time through a medium plate.
2. Now you can leave it bulk and package amounts that you need or stuff through hog casings for links.
