Love Mac and cheese and that looks dang tasty! I love putting a big tray of Mac and Cheese in the smoker. I usually add bacon, various cheeses and top with crushed Chili Cheese Fritos!

Ice Cap, if you don’t like dry mac & cheese, try smoking your sauce separately. I smoke my prepared sauce for 15 – 20 minutes and then mix it with the cooked noodles.

I smoke my sauce also while cooking the noodles and the rest of the prep work. I then mix all together and put the panko and cheese and butter on and smoke again till I get the crunchy top. It may not be realy saucy but I get a cheesy custard like along with the macaroni. I like this texture with a crunch of the peppers and the roasted jalapeno seem to have a more pronounced flavor. I added the tomatos to add moisture as they cooked down and worked out better than expected.
