…..boned and cubed this afternoon. None was under nine pounds. I’ll be starting a sausage marathon next week and needed to get this little task out of the way. These were all Hormel butts and in the end I had maybe a pound of discard. $.99/pound at Hy Vee locally a week or so ago. I cut some beautiful steaks out of a couple of the butts too.
The bones I’ll roast then add water to the roaster and bones and simmer for pork stock…..most probably for gravy. I love pork gravy.
